Jeera Rice

Cumin Rice


This is simple and tasty recipe, if you've got some left over cooked rice on hand that would rather
not go waste. When ever I have left over rice, I prepare Jeera rice.I can say it's the perfect way
of using leftover rice, If you want to prepare for children or any parties go for fresh rice.
So, here is the recipe.

Ingredients :

Cooked Basmati Rice 4 cups
Cumin Seeds 1 tsp (Jeera)
Green  Chilly 5
Curry leaves  6
Ajinomoto  1/4 tsp
Oil 1/2 tbsp
Salt as per taste
Cilantro few sprigs for garnishing

Preparation :

Wash green chilly,slit and cut it.

Heat oil in a pan add cumin seeds let them splutter then add slit green chilly
and curry leaves, let it done for a min.

Now add cooked rice and salt to it. Stir it well and let it done for 4-5 Min's on
low-med flame.

Then add ajinomoto and cilantro, and let done for a couple of Min's.
Switch off the flame and serve hot with masala curries, raita ...etc

It takes 20-25 Min's to prepare.
Makes 2-3 servings.

Note : It can be prepared with ordinary rice, if have leftover rice, in no time we
           can prepare jeera rice.

Cauliflower Rice















Ingredients :

Rice 2 cups
Cauliflower 1 flower small
Onion 1 medium
Cloves 2
Cardamom 1
Cinnamon small piece
Curry Leaves 5
Green Chilly 2
Salt as per taste
Oil 1 tbsp

Preparation :

Chop onion and green chilly.
Separate cauliflower and cut florets.

Boil 3 cups of water, keep the florets in it for 5 Min's then remove from
water and keep them in mesh.

Now cook rice in 4 cups of water, make it fluffy and keep it a side.

Heat oil in a wide pan, add cloves, cardamom, cinnamon then add chopped
onion, green chilly, curry leaves, let them fry for 2 Min's.

Then add cauliflower florets and salt , mix it well and cook for 10-15 Min's on
low flame or till the florets are done.

Now add cooked rice to it and mix it perfectly.
Let it done for 5 Min's. Then remove from flame.

Serve it with curd chutney....etc

Makes roughly 3-4 servings.
It takes approx 25-30 Min's to cook.

Bagara Rice

Bagara Rice














Ingredients :

Basmati Rice 2 cups
Onion 1 small
Green Chilly 2
Curry Leaves 5
Ginger Garlic Paste 1/2 tsp fresh
Cloves 2 - 3
Cardamom 1
Cinnamon 1 inch piece
Kala Jeera 1/4 tsp
Coriander Leaves few sprigs
Salt as per taste
Oil 1 tbsp
Ghee 1 tsp
Water 3, 1/4 cups

Preparation :

Wash basmati rice and soak in water.
Wash and chop onion and slit green chilly.

Heat oil in a rice cooker vessel, add kala jeera, cloves, cardamom, cinnamon
then add chopped onion, curry leaves and green chilly.
Stir it and let it done for a min or 2 and add 3,1/4 cups of water to it.

Now remove water from basmati rice, put soaked rice in the vessel, add salt
to it, keep it on the rice cooker and close it with lid.

Let it done.














Bagara Rice with pepper Mutton, Aloo curry and Tomato Curry.

Now garnish it with coriander leaves and serve it with non-veg curries,
masala curries...etc

It takes 30-35 Min's to prepare.
Makes 2 - 3 servings.

Pepper Egg Rice

Pepper Egg Rice


















Ingredients :

Rice 2 cups
Eggs 8
Pepper Powder  2 - 3 tsp
Green Chilly 3
Cumin Seeds 1 tsp
Mustard Seeds 1/4 tsp
Curry Leaves 5
Coriander few sprigs
Oil 1 tbsp
Salt as per taste

Preparation :

Cook rice in 4 cups of water, make it fluffy and keep it aside.

Heat oil in a non stick pan, add cumin seeds ,mustard seeds after spluttering add
green chilly, curry leaves and mix it.

Beat eggs in it, add salt and mix it well till it fries and becomes small pieces.

Now sprinkle pepper powder, stir and wait for a min.
Then add cooked rice to it and mix it well, turn off the flame after a min or 2.

Garnish with coriander sprigs and serve with any curry.

It takes 20-25 mins to prepare.

It makes 3-4 servings.

Carrot Rice



















Ingredients :

Rice (Raw)  2 cups
Carrots (grated)  4 cups
Onion (chopped) 1/2 cup
Green Chilly  2
Clove  1
Cardamom  1
Cinnamon  small piece
Curry Leaves 5
Coriander Leaves few sprigs
Cashew Nuts few
Oil 1 tbsp
Salt as per the taste

Preparation :

Cook rice in 4 cups of water, make it fluffy and keep it a side.
Peel carrots and grate, chop onion, green chilly finely.

Heat oil in a wide vessel,fry cashew nuts, take out and keep it a side.
Add clove, cinnamon, cardamom then add chopped green chilly, onion,
curry leaves to it.

Let them fry till onion becomes soft.
Then add grated carrot and salt to it and stir perfectly till it is done,
it takes 10 Min's to cook.

Now add cooked rice to it and mix it well, after a min turn off the
flame and garnish with fried cashew nut and coriander leaves.

Now Carrot Rice done, serve it with curd chutney ...etc

It makes 3-4 servings.

It takes approx 20-25 Min's to prepare.

Tomato Rice


Tomato Rice















Ingredients :

Basmati Rice 2 cups (Long-Grain Rice)
Tomatoes 2 big
Onion 1 small
Green Peas few
Garlic pods 5Check Spelling
Fenugreek Leaves few sprigs
Coriander Leaves few sprigs
Cloves 2
Cardamom 1
Cinnamon small piece
Curry Leaves 6
Green chilly 3
Red chilly Powder 1/4 tsp
Cashew Nuts few (Kaaju)
Oil 1 tbsp
Salt to Taste

Preparation :

Wash and chop onion finely, slit green chilly, separate fenugreek leaves
from stems.

Wash basmati rice, add 3 1/2 cups water with little salt and soak for
15-20 Min's then cook. You must take care, not to stir vigorously while
cooking as that may break long-grain. Open it and make it fluffy.

Cut tomatoes and remove seeds from it, then grind it with garlic pods
and salt.

Heat oil in a non-stick pan, fry cashew nuts and keep it aside.
Now add cardamom, cinnamon, cloves then add green peas and fry
for a min.

Add onion, fenugreek leaves, slit green chilly and fry for a min or 2.
Then add tomato paste, red chilly powder to it and fry till it leaves oil.

Add cooked rice to it and mix softly so that rice will not break.

Garnish it with coriander leaves and cashew nuts.

Serve it with curd chutney.

It makes 3-4 servings .

It takes approx 30- 40 Min's to prepare.

Suggestions :

Always choose ripen tomato.

Onion rice




Ingredients :

Rice cooked 2 cups
Onions 2 (chopped)
Green Chilies 4 (slit)
Red Chilly Powder 1/4 tsp
Bengal Gram 1 tsp
urad Dal 1tsp
Mustard Seeds few
Cumin Seeds few
Garlic pods 2 (crushed)
Curry Leaves 5
Turmeric Powder 1 pinch
Salt as per taste
Oil 1/2 tbsp

Preparation :

Heat oil in a pan , add bengal gram ,urad dal after few seconds
add mustard seeds , cumin seeds after spluttering add green chilly
onion , garlic , turmeric powder ,cook until the onion is tender and
has turned golden then add salt and red chilly powder.

Now add cooked rice to it , mix it well .
After 5 mins turn off the flame .

Now onion rice is ready .

Serve it with any pickle or curry .

It makes around 4 servings .

Hardly it will take 10 mins to prepare .

Lemon Rice



















Nimmakaya Pulihora

Ingredients :

Rice 1 1/2 cup (raw)
Lemon Juice 2 tbsps
Salt

For Seasoning :

Oil 2 tbsps
Chana dal 2 tsp
Peanuts 1 tbsp
cumin seeds 1/2 tsp
Mustard seeds 1/2 tsp
Garlic 2 cloves (crushed)
Green Chillies 4 (slit in to 2 pieces)
Curry Leaves 6
Turmeric Powder 1/4 tsp

Preparation :

Cook rice in 3 cups of water,take on to a wide plate.
Make it fluff and let it cool .
Add Lemon juice and salt to this rice .
Mix it well and set aside.

Seasoning :


Heat oil in a pan,add peanuts,chana dal and fry for seconds.
Add mustard seeds,cumin seeds let them turn to golden colour.
Add green chilly,curry leaves ,and let them fry for few seconds.
Then add garlic cloves (crushed) and turmeric powder.

Remove from flame.
Pour seasoning on to the rice.Mix it well.


Serve it with Peanut Powder or chutney.
