Methi Leaves Potato Curry

Fenugreek Potato Curry , Aloo Menthi Aakula Kura
















Ingredients :

Potatoes 2 big size
Fenugreek Leaves 1 cup (Menthi Aakulu)
Onion 1 small
Green Chillies 5
Urad Dal 1 tsp
Mustard Seeds 1/2 tsp
Cumin Seeds 1/2 tsp
Ginger Garlic Paste 1/4 tsp
Turmeric Powder 1/4 tsp
Oil 1 tbs

Preparation :

Wash and Peel Potatoes, cut into medium size pieces.
Seperate Fenugreek stem and take 1 cup of leaves.
Wash the leaves properly.Chop green chillies finely.

Heat oil in the pan , add urad dal, cumin seeds and mustard seeds.
Let them fry for few seconds, add onion and green chillies fry for a min,
add ginger garlic paste and turmeric powder.

Then add fenugreek leaves and stir till it get fried it takes 4-5 mins.
Then add chopped potatoes and salt to it.Stir perfectly.

Keep a lid on the pan and cook on medium-low flame.
Stir very often .It will take 15-20 mins.

OR

You can cook it in pressure cooker also. After keeping all ingredients.
in the cooker .Put lid and wait.
Put it on medium-low flame for 15 mins, you may not get whistle .

Off the flame .open the lid after 5 mins.
See whether Potatoes are cooked if not put on the flame for more 5 mins.

Note : vegetables cook quiet quickly in pressure cooker.
